Sausage, Bacon & Egg Roll

30ml olive oil

375g Eskort Pork Sausages

1 packet Eskort Streaky Bacon

6 large eggs

15ml (1T) milk

salt and freshly ground pepper

3 spring onions, finely sliced

butter, for frying

sweet chilli sauce, for serving



  • Heat the olive oil in a frying pan and fry the pork sausages until browned and cooked through. Remove from the pan and set aside to cool.
  • Once cooled, slice in half lengthways.
  • In the same pan, fry the bacon until crispy, remove from pan and set aside.
  • Whisk together the eggs, milk, salt, pepper and spring onions in a bowl.
  • In another frying pan, melt a little butter and pour about 60ml (¼c) of the egg mixture into the pan and swirl to coat the bottom of the pan (it needs to look like a pancake).
  • Cook the egg until set, remove from the pan and set aside. Continue until the egg mixture is done.
  • Put the egg pancakes flat on a board and put a slice of sausage on the bottom edge of each one.
  • Top with a slice (or 2) of bacon, then roll up firmly and secure with two or three toothpicks.
  • Serve the egg rolls sliced into bite-size pieces with sweet chilli sauce for dipping.
