Sausage bolognese & hidden veggies

Everyone loves a #JustDelicious bolognese and this simple yet flavourful dish helps with sneaking in those dreaded veggies the little ones don’t want to eat.


500g Eskort Gold Medal Pork sausages

30ml (2T) olive oil

1 onion, finely diced

2 carrots, peeled and diced

2 garlic cloves, finely chopped

10ml (2t) Italian herbs 1 can chopped tomatoes

250ml (1c) chicken stock

250g baby spinach

salt and ground black pepper

500g spaghetti

100g parmesan cheese, grated

small handful fresh parsley, chopped


  • Remove the sausage meat from the casing and place in a bowl.
  • Heat the olive oil in a large pan over medium heat.
  • Add the onion, carrots and garlic and cook until softened, about 5 minutes.
  • Add the sausage meat and herbs and season with salt and pepper.
  • Cook until starting to brown, breaking down the meat while frying.
  • When cooked through add the tomatoes and stock and simmer uncovered for 20-25 minutes, until the sauce has reduced and slightly thickened.
  • Cook the spaghetti according to package instructions.
  • Add the baby spinach, stir through and cooked until wilted.
  • Divide the spaghetti between bowls or plates and top with some bolognese.
  • Sprinkle over parmesan and garnish with parsley.
