Sausage, pea & feta salad

We’re all about easy in the Eskort kitchen and this salad is #JustDelicious as a quick lunch or lunch-box treat!


6 Eskort Smoked Viennas

250g baby potatoes

80ml (? c) olive oil

250g (1 c) frozen peas, thawed

1 red onion, sliced

small handful fresh mint

small handful flat leaf parsley

200g feta cheese, crumbled

30 ml (2T) lemon juice


  • Add the potatoes to a pot of salted water and boil until tender, drain and set aside.
  • Heat half the olive oil in a frying pan and fry the viennas until cooked (4-5 minutes).
  • Remove from the heat and slice the viennas. Cut the potatoes in half.
  • Heat the peas in some boiling water for 2-3 minutes, then drain and set aside.
  • Assemble the salad by tossing together the baby potatoes, viennas, red onion, mint and
  • parsley.
  • Add the feta, a drizzle of olive oil, salt and pepper and toss well. Serve chilled.
