Sausages, quinoa & broccoli bowl

Ingredients

375g Eskort Peppadew® & Feta Pork Sausages

500g (2c) quinoa or quinoa and brown rice mix

15ml (1T) olive oil

2 garlic cloves, finely chopped

300g broccoli florets

100g sun-dried tomatoes, chopped

1 can (400 g) kernel sweetcorn

salt and ground black pepper  

Method 

  • Cook the quinoa or quinoa and brown rice mix according to the package instructions, set aside and keep warm.
  • Heat the olive oil in a large pan and fry the sausages until browned and cooked through.
  • Remove from the pan, cool slightly then cut into coins and set aside.
  • Add a little more oil, if needed, to the pan and gently fry the garlic until fragrant, about 1 minute.
  • Add the broccoli, sun-dried tomatoes and cook, stirring constantly, for about 10 minutes until the broccoli has softened.
  • Add the sweetcorn, sausages and quinoa and stir to combine so everything heats through, about 3 minutes.
  • Season with salt and pepper and serve hot.
