Simple sausage pasta

Inspired and totally #JustDelicious, this simple sausage pasta is ready in mere minutes and makes a great dinner for the whole family without too much mess or fuss.


500g spaghetti

10ml (2t) olive oil

60g bread crumbs

5ml (1t) Italian herbs


ground black pepper

1 packet (375g) Eskort Gold Medal Pork Sausages

1 garlic clove, minced

2 cans chopped tomatoes

100g black olives, pitted and halved

Italian parsley, to garnish. 


  • Cook the spaghetti according to the package directions. Once cooked drain it, set it aside and keep it warm.
  • In a large pan, heat olive oil and add the bread crumbs, Italian herbs and a sprinkling of salt and pepper.
  • Toss the ingredients together and cook, stirring occasionally until breadcrumbs are toasted.
  • Remove from the pan and set aside.
  • Add a little more oil to the pan and fry the pork sausages until cooked through. Remove from the pan and set aside.
  • Once the pork sausages have cooled slice them and set aside.
  • To the same pan add the garlic and fry for a minute, then add the chopped tomatoes and olives.
  • Simmer for 15 minutes on a medium heat until the sauce has slightly thickened.
  • Add the sausage slices back to the pan and mix through with the sauce. Cook for another 2-3 minutes until the sausage heats through.
  • Add the cooked spaghetti to the sauce in the pan and toss to combine.
  • To serve sprinkle the toasted bread crumbs over the pasta and garnish with the Italian parsley.
