Smokey sweet potato hash

A #JustDelicious one-pan wonder you can whip up in minutes flat!


2 packets (125g)Eskort Smoked Frankies, sliced

500g sweet potatoes, peeled and diced into small cubes

1 green pepper, chopped

30ml olive oil

5ml paprika

salt and ground black pepper

125g Parmesan, grated

small handful parsley, chopped, to garnish


  • Heat the olive oil in a frying pan. Add the sweet potatoes and fry, tossing occasionally until starting to brown.
  • Add green peppers, paprika, salt and pepper and cook until golden brown (about 10 minutes).
  • Add sliced Frankies and heat through.
  • Turn off the heat, sprinkle with Parmesan and cover for 2 to 3 minutes or until cheese ismelted.
  • Serve warm with a sprinkling of parsley.
