Smoky breakfast scramble

A #JustDelicious one-pan wonder which means skipping breakfast will be a definite no-no!This smokin’ hot scramble will make you get your breakfast sizzle on ALL DAY EVERYDAY. A #JustDelicious one-pan wonder to sort out those summer mornings. 


½ packet Eskort Smoked Russians, cut into coins

8 large eggs

30ml (2T) cream

salt and ground black pepper

15ml (1T) oil

15ml (1T) butter

1 small onion, finely diced

handful of cherry tomatoes, quartered

50g (¼c) feta, crumbled

small handful fresh basil, chopped


  • Whisk the eggs, cream, salt and pepper in a bowl and set aside.
  • In a large frying pan, heat the oil and butter and fry the Russians until browned and cooked through. Remove from the pan and set aside.
  • In the same pan, fry the onions until softened. Add the egg and allow to start setting slightly before stirring to scramble the eggs.
  • Just before the eggs are set, add the Russians back to the pan along with the tomatoes and feta and toss all to combine with the scrambled egg.
  • Serve warm on toast or as is with a sprinkling of chopped basil.
