Spinach, bacon and egg slices

The breakfast of champions – but you can eat these delicious pastries for lunch or dinner too. They’re thát good! 


1 packet Eskort Diced Bacon

1 roll frozen puff pastry, thawed

2 large tomatoes, sliced

1 packet baby spinach

150g plain cream cheese

4 eggs

salt and freshly ground black pepper 


  • Preheat the oven to 200°C. Grease a 2-3cm deep baking tray with nonstick spray.
  • Roll the puff pastry out onto the prepared baking tray, working the pastry up the sides of the tray to form a low barrier.
  • Prick the pastry with a fork and ovenbake for 8 minutes.
  • Remove from the oven and set aside to cool.
  • Layer tomato slices on the pastry, followed by a layer of baby spinach and then diced bacon.
  • Add dollops of cream cheese.
  • Lastly, break the eggs on top, gently breaking the yolk a little so it spreads during cooking.
  • Season with salt and pepper and ovenbake for 20-25 minutes, until the eggs are set and the pastry is golden brown.
  • Slice and serve warm
