2 packets Eskort Mediterranean Pork Sausages

250g Eskort Diced Bacon

30ml (2T) olive oil

1 large onion, sliced

1 garlic clove, finely diced

1 red pepper, roughly chopped

3 medium potatoes, cubed

4 carrots, sliced

3 celery sticks, sliced

1 leek, sliced

5ml (1t) mixed herbs

5ml (1t) paprika

1 can chopped tomatoes

200ml (4/5c) water

salt and ground black pepper

250g green beans, chopped

1 punnet yellow patty pans, halved

crusty bread for serving


  • Heat the oil in a large pot and brown the sausages. Remove from the pot and set aside.
  • Fry the bacon until just cooked, remove and set aside. Fry the onion, garlic and red pepper for 5 minutes.
  • Add the potatoes, carrots, celery and leek and fry for another 5 minutes.
  • Add the herbs and paprika and stir to ensure the spices and vegetables are well coated.
  • Add the tomatoes and water and season with salt and pepper.
  • Stir in the bacon, cover and simmer for 35-40 minutes until the vegetables are tender.
  • Add the sausages, green beans and patty pans and adjust the seasoning if needed.
  • Simmer uncovered for another 15-20 minutes for the sauce to reduce and thicken.
  • Serve warm with crusty bread to soak up the juices.
