Super muffins

Whether you’re having them for breakfast or as a snack, these sweet and savoury muffin options will blow your mind!


Basic muffin recipe

200g Eskort Streaky Bacon

750ml (3c) flour

375ml (1½c) castor sugar

45ml (3T) baking powder

5ml (1t) salt

3 eggs

250ml (1c) oil

250ml (1c) buttermilk

Salted dark chocolate and banana

2 ripe bananas

85ml cocoa powder

15ml (1T) coarse salt

250ml (1c) chopped dark chocolate

Apple crumble & peanut butter

2 Granny Smith apples, grated

65ml peanut butter

65ml flour

65ml desiccated coconut

65ml butter

Berry and white chocolate

250ml (1c) mixed frozen berries

125ml (½c) castor sugar

125ml (½c) white chocolate

Avo, leek and Parmesan

1 large avocado

250ml (1c) thinly sliced leeks

250ml (1c) thinly sliced Parmesan cheese

5ml (1t) black pepper

To serve

extra grated cheese

cream cheese to spread (optional)

fresh farm butter (optional)


Basic muffin recipe

  • Preheat the oven to 180°C .
  • Line a 12-hollow muffin pan with grease-proof muffin cups.
  • Slice bacon into bite-sized pieces and fry in a moderately heated pan until crispy.
  • Remove the bacon from the pan and allow to cool in a mixing bowl.
  • Add the rest of the ingredients to the bacon and mix until well combined and a smooth batter forms.

Salted dark chocolate and banana

  • Mash the bananas with a fork.
  • Add the mashed banana, cocoa powder, salt and chocolate chips to the muffin mixture.
  • Mix until all the ingredients are well combined and a smooth batter forms.
  • Half fill the muffin cups and bake for approximately 20 minutes.
  • Remove from the oven to cool.

Apple crumble and peanut butter

  • In a mixing bowl add the grated apple, peanut butter, flour, coconut and butter.
  • Rub the ingredients between the palms of your hands until a crumble forms.
  • Spoon the premixed muffin batter into the muffin cups and top each muffin with 30ml (2T) of crumble mixture.
  • Bake for 15-20 minutes.
  • Remove from the oven to cool.

Mixed berry and white chocolate

  • Put the frozen mixed berries in a mixing bowl and sprinkle castor sugar over. Allow the berries to defrost.
  • Finely chop the white chocolate and add to the berry mixture.
  • Swirl the berry mixture through the muffin batter and spoon into the muffin cups.
  • Bake for 15-20 minutes.
  • Remove from the oven to cool.

Avo, leek and Parmesan cheese

  • In a small bowl, mash the avo with a fork.
  • Thinly slice the leeks.
  • Add the avo, leeks ,Parmesan and black pepper to the batter mixture and spoon into the muffin cups.
  • Bake for 15-20 minutes.
  • Serve with extra grated cheese and a generous spread of cream cheese or fresh farm butter (if using).
