Try these delicious golden muffins with crispy pan-fried bacon. Add various tasty fillings to the batter before baking to create sweet or savoury options that’ll blow your mind!

Ingredients

Muffin mix

200g Eskort rindless streaky bacon

750ml (3c) flour

375ml (1½c) castor sugar

45ml (3T) baking powder

5ml (1t) salt

3 eggs

250ml (1c) oil

250ml (1c) buttermilk

Muffin fillings

Salted dark chocolate and banana

2 ripe bananas

80ml (?c) cocoa powder

250ml (1c) dark chocolate, chopped

15ml (1T) coarse salt

Apple crumble and peanut butter

2 Granny Smith apples, grated

60ml (¼c) peanut butter

60ml (¼c) flour

60ml (¼c) desiccated coconut

60ml (¼c) butter

Berry and white chocolate

250ml (1c) mixed frozen berries

125ml (½c) castor sugar

125ml (1c) white chocolate

Avo, leek and parmesan

1 large avocado

250ml (1c) Parmesan cheese

250ml (1c) leeks, thinly sliced

5ml (1t) black pepper

extra grated cheese

cream cheese to spread

fresh farm butter 

Method

Muffins

  • Preheat the oven to 180°C. Line a muffin tin with grease-proof muffin cases.
  • Slice bacon into small bite-sized pieces and fry in a pan until crispy.
  • Remove rendered fat from the pan and allow the bacon to cool.
  • Add the rest of the ingredients and bacon to a mixing bowl and mix until well combined and the batter is smooth.

Salted dark chocolate and banana

  • Mash bananas with a fork.
  • Add the mashed bananas, cocoa powder, chocolate and salt to the muffin mixture.
  • Mix all the ingredients until well combined.
  • Fill the lined muffin tins halfway and bake for about 20 minutes or until a skewer inserted into the middle of a muffin comes out clean.
  • Remove from the oven and allow to cool. 

Apple crumble and peanut butter

  • Grate the apples with the skin on.
  • In a mixing bowl, add the grated apples, peanut butter, flour, coconut and butter.
  • Rub the ingredients between the palms of your hands until crumbled.
  • Spoon the muffin dough into the muffin cases and top with 30ml of the crumble mixture.
  • Bake for 15-20 minutes or until a skewer inserted into the middle of a muffin comes out clean.
  • Remove from the oven and allow to cool.

Mixed berry and white chocolate

  • In a mixing bowl, add the frozen mixed berries and castor sugar.
  • Defrost the berries by putting them in the microwave for 30 seconds. Check and repeat until the berries are defrosted.
  • Finely chop the chocolate and add to the berries.
  • Swirl the berry mixture through the muffin dough and spoon into the muffin cases.
  • Bake for 15-20 minutes or until a skewer inserted into the middle of a muffin comes out clean.

Avo, leek and parmesan cheese

  • In a small bowl, mash the avo with a fork.
  • Finely grate the Parmesan cheese and thinly slice the leeks.
  • Add the avo, Parmesan, leeks and black pepper to the batter and spoon into muffin cups.
  • Bake for 15-20 minutes or until a skewer inserted into the middle of a muffin comes out clean.
  • Serve with extra grated cheese and a generous spread of cream cheese or fresh farm butter.
