The Mexican Burrito

Packed with flavour and cheesy goodness this #JustDelicious and filling meal is a firm family favourite. 


375g Eskort Jalapeño Pork Sausages

30ml (2T) olive oil

1 onion, chopped

1 green pepper, diced

6 tortillas

1 can Mexican-style tomatoes

250g cheddar cheese, melted

small bunch fresh coriander to garnish


  • Preheat the oven to 180°C.
  • Heat the oil in a pan and fry the sausages until browned and cooked through. Remove and set aside.
  • In the same pan, fry the onion and green pepper until just softened. Remove from the heat.
  • Spoon a generous amount of the onion mixture onto a tortilla, top with a sausage and a sprinkling of cheddar cheese, then roll up.
  • Place the rolled up tortilla in a shallow casserole dish.
  • Repeat with the remaining tortillas and sausages and place side by side in the casserole dish.
  • Pour the Mexican-style tomatoes over the top and sprinkle generously with the remaining cheese.
  • Bake for 20-25 minutes until cheese has melted.
  • Turn the oven to grill and cook for 1-2 minutes until the cheese has turned golden.
  • Remove from the oven and serve warm with a sprinkling of coriander.
