Toasted bacon & egg wraps with masala cherry tomatoes

This #JustDelicious streaky bacon and egg wrap is filled with sweet and spicy masala tomatoes that’ll wake up your taste buds!  



45ml (3T) olive oil

1 onion, thinly sliced

10ml (2t) Cape Malay spice mix

5ml (1t) garam masala

500g cherry tomatoes

15ml (1T) vinegar

15ml (1T) brown sugar

pinch of salt

Toasted wraps

200g Eskort Rindless Streaky Bacon

45ml (3T) olive oil

4 large eggs

salt and freshly ground pepper

4 wraps

60ml (¼c) butter

125ml (½c) plain yoghurt

5g (1t) flat leaf parsley

5g (1t) fresh coriander



  • Heat the olive oil in a saucepan over a moderate heat and fry the onion with the Cape Malay spice and garam masala until the onion is glossy.
  • Add the cherry tomatoes, vinegar and brown sugar and allow to cook until the tomato skins are loose.
  • Season with salt and set aside.

Toasted wraps

  • Arrange the bacon in a cold frying pan and place on the stove. Set to a high heat and fry the bacon until crispy on both sides.
  • Lower the heat, add the olive oil and fry the eggs until done as preferred. Season with salt and pepper.
  • In a separate pan, toast the wraps in the butter.
  • Spread each wrap with yoghurt, add an egg, then bacon and tomatoes.Garnish with parsley and coriander and serve open or folded. 


 You can also serve your eggs poached or scrambled, depending on your preference.
