Tomato soup & grilled cheese dog

A classic pairing is our #JustDelicious tomato soup and grilled cheese dog. A combination made in heaven!


1kg baby tomatoes, halved1 onion, sliced

5 sprigs of fresh thyme or 10 ml dried

5 garlic cloves, quartered

olive oil

15ml (1t) chilli flakes

salt and ground black pepper

1l (4c) vegetable stock

cream to garnish (optional)

2 spring onions, sliced

Grilled cheese dog

4 Eskort Cheese Russians

oil for frying

4 continental rolls (or hot dog rolls)

butter for rolls

100g cheddar cheese, grated

60g parmesan cheese, grated


  • Preheat the oven to 200ºC.
  • Layer the tomatoes, onion, thyme and garlic in a roasting pan or casserole dish
  • Drizzle generously with olive oil and sprinkle over the chilli flakes, salt and pepper
  • Roast for 40-45 minutes and remove from the oven.
  • In a pot, warm through the stock, then add the roasted tomatoes and bring to the boil.
  • Reduce the heat and simmer for 15-20 minutes.
  • Cool, place in a blender and process until smooth.
  • Pour the soup through a sieve (to catch any unblended tomato skin pieces) then return to the pot to keep warm.
  • Season with salt and pepper and serve warm garnished with cream, if using, and spring onions.

Grilled Cheese Dogs

  • Heat oil in a frying pan and fry the Cheese Russians until golden and cooked through. Remove from the heat and set aside.
  • Place the buttered rolls on a baking sheet and assemble the cheese dogs, each with a Russian and a sprinkling of the cheeses.
  • Grill until the cheese has melted and is bubbling and golden.
  • Serve warm with the soup.
