Warm spiced chickpea salad

Not only heartwarming but healthy too, with a depth of subtle flavours to make this #JustDelicious warm salad a sure-fire winner.


375g Eskort Peppadew® & Feta Pork Sausages

30ml (2T) olive oil

2 cans chickpeas, drained

5ml (1t) cumin powder

pinch of chilli flakes

2 garlic cloves, finely chopped

100g sundried tomatoes, chopped

salt and ground black pepper

small handful Italian parsley

50g feta, crumbled


  • Heat some olive oil in a pan and fry the sausages until cooked through and browned. Remove from the heat, cool and slice into coins.
  • In the same pan, using the rest of the oil, add the chickpeas, cumin, chilli flakes and garlic.
  • Stir to combine and fry gently until the spices have cooked off. Try not to break up the chickpeas.
  • Add the sundried tomatoes and season lightly with salt and pepper.
  • Return the sausages to the pan, toss to combine and cook until warmed through.
  • Serve warm with a sprinkling of fresh parsley and crumbled feta cheese.
