ESKORT:Zesty Pork Fillet & Vegetable Skewers

Don’t lose that summer bod just yet! We’re keeping it light and fresh in the Eskort kitchen today with these zesty pork fillet skewers – the perfect, quick and easy way to stay slim down!


1 Eskort Zesty Citrus Pork Fillet

8 wooden skewers

1 punnet baby marrows, sliced

1 punnet patty pan squash, quartered

1-2 red onions, cut into wedges

500g cherry tomatoes, whole

15ml olive oil

salt and ground black pepper


  • Preheat the oven to 200°C and grease a baking tray with nonstick spray.
  • Slice the fillet in half lengthwise and then slice into chunks. Keep the zesty citrus marinade.
  • Thread each wooden skewer with a piece of each of the fillet, baby marrow, patty pan, red onion and tomatoes and repeat until the skewer is full. Repeat with remaining skewers.
  • Place the skewers on the prepared tray and drizzle with a little olive oil, the remaining marinade and season with salt and pepper. Turn skewers to make sure all sides are well coated.
  • Roast for 25-30 minutes, turning occasionally, until the pork is cooked through and vegetables are tender.
  • Serve warm with a side or salad of your choice.
