Quiche Lorraine is a popular savoury pastry – perfect for breakfast, brunch or as a party treat.

Have you tried the art of quiche making? Flaky, fluffy and oh so flavourful, it’s an easy dish that’s tasty and ready in a flash. Though synonymous with French cuisine, it’s also popular all around the world.

Quiche Lorraine

Preparation: 10 min |Cooking: 6 min | Baking: about 30 min | Serves: 4-6

Ingredients 

Crust:

1 roll (400g) frozen short-crust pastry, defrosted

flour for rolling

dried beans

Filling:

30ml (2T) oil

1 packet (250g) bacon diced

2 red onions, sliced

250 ml (1c) milk

125 (½c) cream

3 eggs; salt

pepper and a pinch of nutmeg

250ml (1c) grated cheddar cheese

To serve:

salad or roast vegetables

Method

  • Preheat the oven to 180ºC and lightly grease a medium-sized loose-bottom pie tin with oil or butter.

Crust

  • Roll out the defrosted pasty on a floured, flat surface until large enough to fill the bottom and sides of the tin.
  • Line the pie tin with the dough and prick holes in the crust.
  • Line with baking paper and fill with the dried beans.
  • Bake for 7 minutes, remove the paper and beans and bake for another 3-5 minutes until brown.

Filling

  • Heat the oil and fry bacon until almost crispy.
  • Remove from the pan and set aside.
  • Fry the onions in the same pan until soft.
  • Scatter the bacon and onion on the bottom of the half-baked pastry.
  • Whisk the milk, cream and eggs in a bowl until combined.
  • Add the salt, pepper, nutmeg and stir in half of the grated cheese.
  • Pour the mixture over the pastry, sprinkle over the rest of the cheese and bake for 30 minutes until set in the middle.

To serve

  • Serve the quiche lukewarm with a salad or roast vegetables.
