  • 5ml - baking powder
  • 2,5ml - salt
  • 60ml - butter
  • - 1 egg
  • 2 - ripe avocados
  • - crispy fried bacon
  • - milk, for brushing
  • - salt
  • 500ml - self-raising flour
  • 160ml - amasi
  • 15ml - lemon juice
  • 2 - spring onions, chopped

Preheat the oven to220°C.

Lightly sprinkle flour on a baking sheet.

1 Sift the self-raising flour, baking powder and salt into a large mixing bowl.

Add the butter and rub between your fingertips until the mixture looks like coarse breadcrumbs.

Make a well in the middle of the mixture.

2 Beat the egg and amasi together and pour into the well in the flour mixture.

Mix with a fork until a dough forms. Transfer the dough to a lightly floured surface.

Lightly shape into a ball without kneading the dough.

3 Roll the dough out until about 2cm thick. Using cookie cutters or a glass, press out circles (or any shape of your liking) in the dough and arrange on the prepared baking sheet.

4 Lightly brush the scones with milk and bake for 10-15 minutes or until golden brown and done.

Remove from the oven and transfer to a wire rack to cool.


Mash the avocado and mix in the lemon juice and spring onions. Season with salt.


Slice the scones and spoon avocado on top of each half.

Top with crispy bacon and a poached egg and serve.
