Ingredients
  • - 4 bananas, peeled and halved
  • 80ml - caster sugar
  • - ice cream or frozen yoghurt granola, to serve
  • 125ml - grape juice
  • 250ml - passion fruit pulp
  • 60ml - caster sugar
  • - DRESSING
Method

Preheat the oven grill.

1 Put the bananas on a metal tray and sprinkle the caster sugar over. Put under a hot grill to caramelise the top of the bananas until golden.

2 DRESSING Put all the ingredients in a pot over medium heat and simmer until the sugar dissolves. Set aside until it thickens.

3 Divide the bananas between plates and top with scoops of ice cream or frozen yoghurt. Drizzle the dressing over and sprinkle the granola on top.

TIP For a zesty alternative, use orange preserve instead of passion fruit.
