1 Beat the eggs with the water and place in a bowl suitable for dipping. Mix together the coconut and breadcrumbs and place in another bowl suitable for dipping.
2 Using the palm of your hand, flatten the prawns slightly. Place the flour in a bowl, add the prawns and toss to coat.
3 Dip each prawn in the egg then in the coconut and breadcrumbs. Place them on a plate and refrigerate for 30 minutes.
