Delicious flapjacks

Ingredients
  • - full-cream plain yoghurt
  • 20ml - sugar
  • 2 - eggs
  • - pinch of salt
  • 25ml - sunflower oil, plus extra for shallow- frying
  • 350ml - milk
  • 500ml - cake flour
  • - honey
  • 20ml - baking powder
  • - fresh berries (optional)
Method

Method:

1 Mix the flour, baking powder, sugar and salt in a large mixing bowl.

2 In another bowl, beat the eggs, milk and oil together.

3 Using a wire whisk,mix the liquid mixture into the flour mixture bit by bit, beating continuously with the whisk to create a smooth batter. Leave to stand for 30 minutes.

4 Heat a pan with a little oil and fry the flapjacks until bubbles form on the surface, then turnover with an egg lifter and fry the other side.

5 To serve

Serve with the honey, fresh berries(if using) and yoghurt.
