- - full-cream plain yoghurt
- 20ml - sugar
- 2 - eggs
- - pinch of salt
- 25ml - sunflower oil, plus extra for shallow- frying
- 350ml - milk
- 500ml - cake flour
- - honey
- 20ml - baking powder
- - fresh berries (optional)
1 Mix the flour, baking powder, sugar and salt in a large mixing bowl.
2 In another bowl, beat the eggs, milk and oil together.
3 Using a wire whisk,mix the liquid mixture into the flour mixture bit by bit, beating continuously with the whisk to create a smooth batter. Leave to stand for 30 minutes.
4 Heat a pan with a little oil and fry the flapjacks until bubbles form on the surface, then turnover with an egg lifter and fry the other side.
5 To serve
Serve with the honey, fresh berries(if using) and yoghurt.
