Ingredients: 6 deboned chicken thighs or 4 breast fillets; 15 ml chicken spice; 250 ml buttermilk; 2 garlic cloves, bruised; 125 ml cornflour; 125 ml cake flour; 5 ml salt; 500 g extra-thin pasta noodles; 60 ml readymade pesto; 30 ml olive oil; squeeze of lemon juice; handful of fresh watercress or basil; salt and freshly ground pepper
