Caramel, peanut and chocolate chip bites

125 g butter, melted

1 egg

125 ml (½ c) brown sugar

10 ml (2 t) vanilla essence

375 ml (1 ½ c) flour

pinch of salt

200 g Tennis biscuits, crushed

250 ml (1 c) chocolate chips

1 can (385 g) condensed milk

125 ml (½ c) smooth peanut butter

Preheat the oven to 180 °C. Line a 22 cm square baking tin with foil and grease.

Put the butter in a mixing bowl and stir in the egg, sugar and vanilla essence. Whisk until smooth. Add the flour and salt and stir until just combined – don’t overstir.

Turn the batter into the prepared tin and smooth the top lightly, pushing the batter into the corners as you do.

Evenly sprinkle the biscuits over the top, followed by the chocolate chips. Set aside.

In a large mixing bowl combine the condensed milk and peanut butter and whisk until smooth. Carefully pour the mixture over the chocolate chips.

Bake for 30 minutes or until top is set and lightly golden. Set aside for 2 hours then cut into squares.
