125 g butter, melted
125 ml (½ c) brown sugar
10 ml (2 t) vanilla essence
375 ml (1 ½ c) flour
pinch of salt
200 g Tennis biscuits, crushed
250 ml (1 c) chocolate chips
1 can (385 g) condensed milk
125 ml (½ c) smooth peanut butter
Preheat the oven to 180 °C. Line a 22 cm square baking tin with foil and grease.
1 Put the butter in a mixing bowl and stir in the egg, sugar and vanilla essence. Whisk until smooth. Add the flour and salt and stir until just combined – don’t overstir.
2 Turn the batter into the prepared tin and smooth the top lightly, pushing the batter into the corners as you do.
3 Evenly sprinkle the biscuits over the top, followed by the chocolate chips. Set aside.
4 In a large mixing bowl combine the condensed milk and peanut butter and whisk until smooth. Carefully pour the mixture over the chocolate chips.
5 Bake for 30 minutes or until top is set and lightly golden. Set aside for 2 hours then cut into squares.
