250 g Cheddar cheese, grated
3 tomatoes, chopped
60 ml (¼ c) hot atchar, strain oil
handful coriander leaves, chopped
6 tortillas, cut open
45 ml (3 T) oil
- Combine the cheese, tomatoes, atchar and coriander in a bowl.
- Divide the mixture between the tortillas. Spread one half of each tortilla, place the other half on top and press down.
- Brush one side of each tortilla with oil and toast it on a hot griddle pan on high heat until charred and golden. Brush the other side with oil and toast until charred and the cheese is slightly melted.
