Chicken cacciatore with cheesy phuthu


Serves 6

Preparation time: 10 min

Cooking time: 45 min

45 ml (3 T) oil

1 onion, sliced

2 celery stalks, chopped

3 carrots, chopped

6 chicken breasts

60 ml (¼ c) tomato purée

500 ml (2 c) chicken stock

2 bay leaves


750 g (3 c) maize meal, cooked

15 ml (1 T) butter

60 ml (¼ c) white Cheddar cheese

  1. Heat the oil in a pan and fry the onion, celery and carrots until soft. Add the chicken breasts to the pot and cook for 5 minutes or until browned.
  2. Stir in the tomato purée and stock. Add the bay leaves, reduce the heat and simmer for 30 minutes or until the chicken is cooked through.
  3. Cook the phuthu according to packet instruction. Add the butter and cheese and stir to combine.
