45 ml (3 T) oil
1 onion, sliced
2 celery stalks, chopped
3 carrots, chopped
6 chicken breasts
60 ml (¼ c) tomato purée
500 ml (2 c) chicken stock
2 bay leaves
Phuthu
750 g (3 c) maize meal, cooked
15 ml (1 T) butter
60 ml (¼ c) white Cheddar cheese
- Heat the oil in a pan and fry the onion, celery and carrots until soft. Add the chicken breasts to the pot and cook for 5 minutes or until browned.
- Stir in the tomato purée and stock. Add the bay leaves, reduce the heat and simmer for 30 minutes or until the chicken is cooked through.
- Cook the phuthu according to packet instruction. Add the butter and cheese and stir to combine.
