Choc-chip banana bread

560 ml (2 ¼ c) self-raising flour

5 ml (1 t) baking soda

5 ml (1 t) ground cinnamon

200 ml (¾ c) caster sugar

180 ml (¾ c) milk

80 ml (? c) oil

2 eggs

5 ml (1 t) vanilla essence

2 bananas, mashed

50 g chocolate chips

Preheat oven to 180 °C. Line a medium loaf pan with greased baking paper.

  1. Combine flour, baking soda, cinnamon and sugar in a large bowl. Whisk milk, oil, eggs, vanilla and banana in a medium bowl. Add wet ingredients to dry ingredients and stir to combine. Fold in chocolate.
  2. Pour into prepared pan. Smooth top. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Cool in pan for 10 minutes. Turn out onto a wire rack to cool.
