250 g butter, softened
125 ml (½ c) icing sugar
5 ml (1 t) vanilla essence
375 ml (1½ c) flour
80 ml (? c) ground almonds
125 ml (½ c) custard powder
2, 5 ml (½ t) baking powder
1. Preheat the oven to 180°C. Line 2 baking sheets with baking paper. Place the butter, icing sugar and vanilla essence in a food processor and blitz until well blended.
2. Add the flour, almonds, custard powder and baking powder and blend.
3. Place spoonfuls of the mixture on the prepared baking sheets and flatten with a fork. Bake for 12 minutes or until golden. Place on a wire rack to cool.
