You will need
400 g (1 box) frozen hake fillets
5 ml (2 tsp) salt
batter
250 ml (1½ cups) cake flour
5 ml (1 tsp) baking powder
15 ml (1 tbsp) curry powder
15 ml (1 tbsp) cayenne pepper
5 ml (1 tsp) spice for fish (optional)
3 eggs, whisked
oil for shallow frying

potato wedges or chips
Method
1. Defrost and wash the fish and pat dry. set aside. 2. Mix the flour, baking powder and spices together on a flat plate. Whisk the eggs well in a bowl and pour into a plate. coat the fish in flour, dip in the egg and set aside. 3. heat the oil in a large frying pan and fry the fish for 4 to 5 minutes until crispy and golden in colour. serve with potato wedges or chips and a leafy, green side salad.
