Flame cupcakes

375 ml (1½ c) flour

7,5 ml (1½ t) baking powder

a pinch of salt

125 ml (½ c) butter

250 ml (1 c) caster sugar

2 eggs

5 ml (1 t) vanilla essence

125 ml (½ c) buttermilk


140 g butter

375 ml (1½ c) icing sugar

5 ml (1 t) vanilla essence

30 ml (2 T) milk

a few drops of yellow, red and orange food colouring

1. Preheat the oven to 180 °C. Line a muffin tin with paper liners and set aside. In a medium bowl, sift together the flour, baking powder and salt and set aside.

2. In an electric mixer on medium speed beat the butter and sugar together for 5 minutes or until pale, light and fluffy.

3. Add the eggs one at a time, mixing thoroughly after each addition. Scrape the sides of the bowl, add the vanilla essence and mix until combined.

4. Fold in the dry ingredients. Add the buttermilk and mix well with a rubber spatula. Divide the batter between the cases and bake for 25 minutes or until golden.

5. Allow the cupcakes to cool for 5 minutes and then remove to cool completely before frosting.

6. Frosting Beat the butter until soft. Add half the icing sugar and beat until smooth. Add vanilla essence, the rest of the icing sugar and milk. Beat until smooth. Place icing into three bowls. Stir yellow colouring into one bowl, orange into another and red into the third.

7. In a piping bag with a star nozzle spoon orange icing into one side of the piping bag, yellow icing into the same bag on the other side and red between the other two colours. Twist the top of the bag and gently squeeze the icing onto a plate until the three colours combine and come out in a marble effect. Pipe icing on top of the cupcakes to resemble a flame.
