This recipe from Nelly Pitso from Pretoria is delicious. The ham can be substituted with any cold meat.

Serves 4 to 6
You will need
45 ml (3 tbsp) oil
1 large onion, chopped
2 cloves garlic, finely chopped
500 ml (2 cups) rice
200 ml (¾ cup + 4 tsp) chicken stock
500 ml (2 cups) ham
500 ml (2 cups) cream or milk
60 ml (4 tbsp) freshly chopped parsley
125 ml (½ cup) grated cheddar cheese
30 ml (6 tsp) margarine or butter
Method
1. Preheat the oven to 180 °C and grease a casserole dish. In a large saucepan, sauté the onion and garlic in oil for 3 minutes until soft.
2. Add rice to the onion and garlic and fry for a few minutes. Pour in the stock and simmer without stirring until the rice is soft.
3. Combine 2/3 of the ham with the milk and parsley in a bowl and mix into the rice.
4. Place rice and meat in alternate layers into the greased casserole dish, sprinkle with grated cheese and dot butter on top. Bake in the oven for 30 minutes. Serve warm.
