Roast chicken

1 whole chicken

750 ml (3 c) warm water

10 ml (2 t) salt

10 ml (2 T) sugar

45 ml (3 T) soy sauce

1 onion, chopped

3 carrots, chopped

375 ml (11Ž2 c) chicken stock

125 ml (1Ž2 c) fresh herbs (such as rosemary, coriander and/or thyme)

4 garlic cloves, chopped

15 ml (1 T) chicken spice

5 ml (1 t) turmeric

45 ml (3 T) oil

salt and pepper

1 Put the chicken in a bowl. Mix the warm water with the salt, sugar and soy sauce, pour over the chicken and set aside for 2 hours.

2 Preheat the oven to 200 °C.

3 Put the onion and carrots in a deep roasting pan and put the chicken on top.

4 Combine the remaining ingredients and pour over the chicken and into the cavity.

5 Roast uncovered for 1 hour or until the chicken is cooked and browned.

6 Mash the vegetables from the roasting pan and serve with the chicken.
