1 kg pork roast
30 ml (2 T) oil
salt and freshly ground black pepper to taste
500 g red potatoes
1 onion, peeled and halved
2 apples, sliced
2 pears, sliced
500 ml (2 c) chicken stock
1. Preheat oven to 180°C. Using a sharp knife, score the skin of the pork, then rub with oil and season with salt and pepper.
2. Place the leg on a roasting tray and roast for 2 hours, basting with oil from the pan every 30 minutes.
3. Place potatoes, onion, apples and pears in a saucepan. Pour over the stock and season with salt and pepper and simmer for 30 minutes or until all flavours are combined to create a basting sauce.
4. After 1½ hours of roasting baste and return to the oven. Serve slices of pork with potatoes and the rest of the basting sauce.
