500 ml (2 c) self-raising flour
250 ml (1 c) brown sugar
160 g cold butter
a little cold water
Spices
10 ml (2 t) cinnamon
1 ml (¼ t) ground cloves
2,5 ml (½ t) ginger
5 ml (1 t) mixed spice
2,5 ml (½ t) nutmeg
1 ml (¼ t) cumin
Preheat the oven to 180 °C and grease a baking tray.
1 Spices: Mix together the spices in a sealed bottle.
2 Mix together the flour, sugar and 10 ml (2 t) of the spice mixture. Rub in the butter, add the water to the flour in small amounts and mix until the mixture forms a firm dough.
3 Cover with clingfilm and refrigerate for 30 minutes.
4 On a lightly floured surface roll out the dough and cut out desired shapes. Place in the fridge for 15 minutes, then bake the biscuits for 8 minutes or until browned.
5 Transfer the biscuits to a cooling rack and leave to cool.
