Sugar-free ginger biscuits

250ml (1 c) flour

125ml (½ c) oat bran

5ml (1 tsp) ground ginger

2.5ml (½ t) ground mixed spice

2.5 ml (½ t) bicarbonate of soda

60 ml (¼ c) xylitol sweetener

45 ml (3 T) water

40 g margarine

1 large egg

Preheat the oven to 180 °C. Grease 1 or 2 baking trays.

Mix the flour, oat bran, ginger, mixed spice and bicarbonate of soda.

Heat the sweetener and margarine together in a saucepan over low heat, slowly pour in the water while sitrring until the sweetener has dissolved.

Add the sweetener mixture and egg to the dry ingredients and mix well.

Roll the dough into small balls and arrange on the baking tray(s). Flatten slightly with your hand or the bottom of a glass. Bake for 10 minutes or until the biscuits are firm. Cool on a wire rack.
