A quick and easy dinner that doesn’t compromise on flavour

350g Eskort Chicken Sausage
2 red peppers
30ml (2T) fresh thyme
15ml (1T) smoked paprika
1 litre (4c) pumpkin, cooked
15ml (1T) butter
15ml (1T) sriracha sauce
salt and freshly ground black pepper
cooked mashed potato
60ml (¼c) sour cream
- Preheat the oven to 180°C.
- Quarter the red peppers and place them on a baking sheet with the sausages. Drizzle with olive oil and sprinkle over the thyme and smoked paprika. Bake for 10 minutes.
- Mash the pumpkin with the butter and sriracha sauce and season with salt and freshly ground pepper.
- Serve the sausages and peppers on the mashed potato with a spoonful of sour cream.
