100g Eskort BBQ Pulled Pork
250ml (1c) flour
5ml (1t) baking powder
2,5ml (½t) salt
45ml (3T) castor sugar
½c grated cheddar
250ml (1c) creamed sweet corn
15ml (1T) chopped chives
salt and freshly ground black pepper
- Combine all the ingredients in a mixing bowl then scoop the batter into takeaway coffee cups lined with muffin papers. Cover the batter with a small piece of baking paper and freeze.
- Pop the frozen muffin cups into the microwave oven for 5 minutes, on high with the baking paper still covering the batter.
