BBQ Pulled Pork
250ml (1c) grated butternut
60ml (¼c) chopped spring onions
5ml (1t) yellow curry paste
45ml (3T) fruit chutney
5ml (1t) cinnamon
125ml (½c) coconut cream
salt and freshly ground black pepper
- Combine the butternut, pulled pork, spring onions, yellow curry paste, chutney and cinnamon in a bowl and mix until well combined.
- Add the mixture to your microwave proof lunch box.
- Whisk the eggs and the coconut cream, add to the pulled pork mixture and season with salt and pepper.
- Cook the bobotie in the microwave for 5-6 minutes on high heat.
