Smoked Eskort Pork Fillet
2 peaches, cut into quarters
60ml (4T) honey
oil for cooking
300g heirloom tomatoes
zest and juice of 1 lime
1 head butter lettuce
salt and freshly ground pepper
- Heat a frying pan over moderate heat and fry the peaches in some oil and honey until charred.
- Halve the tomatoes and add to the peaches with the rest of the honey, lime zest and juice.
- Thinly slice the smoked fillet.
- Serve the marinated peaches with the tomatoes on the butter lettuce and add the thinly sliced pork fillet. Season salt and pepper.
