Bacon & Banana French Toast Jaffle with Peanut Butter Sauce

Savoury bacon and sweet banana combine to make a special brunch you’ll relish.

Ingredients

Filling

200g Eskort Diced Bacon

4 large bananas, sliced

250g smooth cottage cheese

15ml (1T) flour

60ml (¼c) castor sugar

5ml (1t) vanilla essence

French toast

4 eggs, beaten

30ml (2T) milk

5ml (1t) vanilla essence

8 slices white bread

Peanut butter sauce

125ml (½c) peanut butter

125ml (½c) milk

5ml (1t) vanilla essence

pinch of salt

Method

Filling

  • In a frying pan over moderate heat, fry the bacon until crispy.
  • In a mixing bowl combine the cottage cheese, flour, castor sugar and vanilla essence.

French toast

  • Combine the eggs, milk and vanilla essence in a shallow dish.
  • Dip only one side of the bread into the egg mixture and place it wet side down into a greased jaffle iron. 
  • Scoop some of the cottage cheese mixture onto the bread, add banana and bacon then close with another egg-dipped slice of bread.
  • Toast in the jaffle iron for about 5 minutes on each side.

Peanut butter sauce

  • Add all the ingredients to a saucepan over moderate heat.
  • Whisk until smooth and remove before it starts to boil.
  • Serve the jaffles with the peanut butter sauce.
