Bacon, basil & egg bites

Kiddie approved and totally portable! Our #JustDelicious bites will have the whole family asking for more!


250g Eskort Bacon Cutts

125g (½c) Cheddar, grated

125ml (½c) basil pesto

6 large eggs

salt and ground black pepper

small handful fresh basil, shredded.


  • Preheat the oven to 200°C and grease a 6-mould muffin tin with nonstick spray (you can also use a smaller 12-mould muffin tin if preferred).
  • Line each mould with pieces of bacon, then place a little of the cheese into the bottom of each mould, followed by a dollop of basil pesto.
  • Crack an egg into each one, then season with salt and pepper.
  • Place in the oven and bake for 20 minutes or until the eggs are cooked.
  • Serve warm with a sprinkle of shredded basil.
