Bacon cinnamon buns with cream cheese & vanilla glaze


Level up classic cinnamon buns by adding #JustDelicious salty bacon bits and an indulgent cream cheese glaze!


Cinnamon butter

200g Eskort Rindless Streaky Bacon

125ml (½c) butter, room temperature

125ml (½c) brown sugar

5ml (1t) vanilla

15ml (1T) cinnamon


250g (1c) cream cheese

250g (1c) mascarpone cheese

250ml (1c) icing sugar

5ml (1t) vanilla


500ml (2c) bread flour

125ml (½c) castor sugar

5ml (1t) salt

10g (2t) yeast

125ml (½c) lukewarm water

60ml (¼c) butter

250ml (1c) milk

2 eggs

5ml (1t) vanilla


  • Preheat the oven to 180°C.

Cinnamon butter

  • Fry the bacon in a large frying pan over high heat until crispy. Chop up into smaller pieces and set aside to cool.
  • Combine the butter, sugar, vanilla and cinnamon in a small bowl and add half the bacon. Refrigerate until ready to use.


  • Whisk all the ingredients in a mixing bowl until stiff. Refrigerate until ready to use.


  • Combine the flour, castor sugar and salt in a large mixing bowl.
  • Stir the yeast into the water until dissolved and keep aside.
  • Melt the butter in a small saucepan, stir in the milk and remove from the heat.
  • Whisk the eggs into the milk mixture and add the vanilla.
  • Stir the yeast and egg mixtures into the dry ingredients and mix until a dough forms.
  • Turn the dough out on a lightly floured surface and knead for five minutes until smooth.
  • Return the dough to the bowl, cover with clingwrap and leave to rise in a warm place until double in size.
  • Roll the dough out on a lightly floured surface to 5mm thick. Spread with the cinnamon butter, covering completely.
  • Roll up the dough into a long log and slice into 4cm thick buns.
  • Place the buns on a baking sheet lined with baking paper. Cover with clingwrap and store in a warm place for five minutes.
  • Bake for 20 minutes until golden brown.
  • Serve the buns topped with the cream cheese glaze and garnished with the rest of the bacon.
