Breakfast sausage & beans on toast with pickled red onion


Pickled red onion and a butter bean hummus with a hint of garlic will make this simple breakfast a flavour-packed delicious start to your day. 


1 packet Eskort Breakfast Sausages

Pickled red onion

60ml (¼c) spirit vinegar

15ml (1T) sugar

1 red onion, thinly sliced

Butter bean hummus

410g (1 can) butter beans, drained

1 clove garlic, roasted

60ml (¼c) avocado oil

juice of 1 lemon

salt and pepper

To serve

4 slices toasted rye bread

250ml (1c) fresh edamame beans

4 poached eggs

salt and pepper


  • Preheat the oven to 180°C. Grease a nonstick baking sheet.
  • Place the sausage on the prepared sheet and bake for 15 minutes.

Pickled Red Onion

  • Heat the vinegar and add the sugar, stirring until it dissolves.
  • Pour the pickling mixture over the onion and set aside.

Butter Bean Hummus

  • Put all ingredients in a food processor and blend until smooth.

To serve

  • Spread the hummus on the toast then place sausages and edamame beans on top.
  • Finish off with the poached eggs and pickled red onion. Season with salt and pepper.
