Corn scrambled eggs with cheese grillers and cheesy toasted wraps



500g Eskort Cheese Grillers 

4 wraps 

500ml (2c) grated white cheddar 

60ml (¼c) olive oil

45ml (3T) butter 

250ml (1c) corn kernels 

8 eggs 

1 avocado 

juice of 1 lemon 

2,5ml (½t) salt

2,5ml (½t) pepper 

60ml (¼c) chopped chives 

1 handful fresh rocket 


  • Fill half of the wraps with white cheddar and fold over. 
  • Add some olive oil to a pan and toast the cheese-filled wraps until golden. Remove from the pan and keep aside.
  • Add more olive oil to the pan and melt the butter. 
  • Add the corn kernels and fry until golden. 
  • Beat the eggs in a small bowl and add to the pan. 
  • Slice the avo and season with the lemon juice, salt and pepper. 
  • Serve the scrambled eggs on the wraps, top with the avo and garnish with chives and rocket.
