200g Eskort Rindless Streaky Bacon
Tomato & olive salsa
3 ripe tomatoes, chopped into cubes
250ml (1c) black olives, chopped
60ml (¼c) fresh basil, torn
60ml (¼c) chives, chopped
60ml (¼c) Italian parsley, chopped
salt and pepper, to taste
15ml (1T) olive oil
zest and juice of 1 lemon
4 servings of phuthu, prepared according to pack instructions
500ml (2c) amasi
- Fry the bacon in a frying pan over moderate heat until crispy.
Tomato & Olive Salsa
- Mix the tomatoes, olives and herbs in a small mixing bowl, then add salt and pepper, olive oil, and lemon juice and zest.
- Dish a portion of phuthu and serve topped with tomato and olive salsa, crispy bacon, and amasi.
