Easy Freezy Muffins

This quick and easy muffin batter can be baked from frozen which makes it perfect for a hassle-free morning.



750ml (3c) cake flour

10ml (2t) baking powder

125ml (½c) brown sugar

5ml (1t) salt

2 eggs

375ml (1½c) milk

125ml (½c) oil


Bacon, Cheese & Sundried Tomato

250ml (1c) Eskort Diced Bacon, cooked

250 ml (1c) cheese

60ml (¼c) sundried tomato paste

Cheesy Ham & Spinach

250ml (1c) cheese

250ml (1c) Eskort Mini Picnic Ham, diced

125ml (½c) wilted spinach

Sweet Chilli Chicken Vienna

250ml (1c) Eskort Chicken Viennas, chopped

45ml (3T) sweet chilli sauce 



  • Combine all ingredients in a mixing bowl until a smooth batter forms.


  • Add your chosen flavour ingredients and combine.
  • Scoop into prepared muffin trays and freeze until the morning, or when you’re ready to bake.
  • Bake from frozen in a pre-heated oven at 180°C for 20 to 25 minutes.
