Grilled ham & cheese toasties with chilli & beer dipping sauce


This tasty beer and cream-based dipping sauce is a #JustDelicious spicy companion to these classic grilled toasties! 


Grilled ham & cheese toasties

200g Eskort Double Smoked Ham

60ml (¼c) butter, melted

8 slices sourdough bread 

250ml (1c) white cheddar 

250ml (1c) mozzarella 

125ml (½c) cream cheese 

60ml (¼c) Gorgonzola 

15ml (1T) fresh thyme, chopped 

2,5ml (½t) salt 

2,5ml (½t) freshly ground black pepper 

Chilli & beer dipping sauce

15ml (1T) olive oil 

125ml (½c) leeks, chopped  

1 green chilli, chopped NOT IN METHOD

250ml (1c) beer 

250ml (1c) cream 

15ml (1T) hot English mustard 

2,5ml (½t) salt 

2,5ml (½t) freshly ground pepper 


Grilled ham & cheese toasties

  • Spread one side of each bread slice with melted butter.
  • Combine all the cheeses, thyme, salt and black pepper in a large mixing bowl. 
  • Spread a spoonful of the cheese mixture on the unbuttered side of four bread slices and cover with a slice of ham.
  • Close the toastie with the remaining four slices of bread, buttered side up.
  • In a frying pan over moderate heat, slowly fry the toasties until golden brown on both sides and the cheese has melted. 

Chilli & beer dipping sauce 

  • Heat the olive oil in a large frying pan over high heat and fry the leeks and chilli.
  • Slowly pour in the beer and cook over high heat until almost completely reduced.  
  • Adjust to moderate heat and stir in the cream, mustard, salt and pepper.
  • Simmer until a thick sauce forms then remove from the heat. 
  • Slice each toastie in half and serve with a side of chilli & beer dipping sauce.
