Royal Glazed Bacon & Cinnamon Waffle


Sweet royal icing and bits of savoury bacon make this waffle a crispy treat that you’ll definitely want to eat.



500g Eskort Minced Bacon

500ml (2c) cake flour

30ml (2T) brown sugar

5ml (1t) baking powder

30ml (2T) cinnamon

pinch of salt

375ml (1½c) buttermilk

3 eggs

5ml (1t) vanilla

125ml (½c) butter, melted

oil for frying

Royal icing glaze

1 egg white

500ml (2c) icing sugar

5ml (1t) vanilla essence



  • Fry the bacon in a pan until crispy. Set aside to cool.
  • In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt. Add the bacon (leave a little for later).
  • In another bowl, combine the buttermilk, eggs, vanilla and melted butter.
  • Pour the buttermilk mixture into the flour mixture and whisk until smooth.
  • Pour the batter into a greased waffle iron and until golden and slightly crispy.

Royal icing glaze

  • Place the egg white in a bowl and whisk with an electric beater until foamy.
  • Add the icing sugar and whisk on high until a thick smooth icing form.
  • Add the vanilla and glaze the hot waffles.
  • Serve with your favourite ice cream and a sprinkling of minced bacon.
