1x Eskort Pork Loin Roast
60ml (¼c) treacle sugar
30ml (2T) ground cumin
30ml (2T) smoked paprika
2 garlic cloves, finely chopped
30ml (2T) thyme, chopped
15ml (1T) ginger
5ml (1t) black pepper
15ml (1T) coarse salt
zest of 1 lemon
- Preheat the oven to 180°C.
- Place the pork loin on a baking sheet lined with foil and drizzle with olive oil.
- In a small bowl, combine the rest of the ingredients and rub onto the loin, reserving a little of the rub for serving.
- Wrap the loin in foil and roast for 45 minutes.
- Allow to rest for 5 minutes before carving.
- Season the loin slices with dry rub before serving with a side of your choice.
