Spicy cheese & sausage fondue

This #JustDelicious dish is not only traditional but also competition worthy – my signature dish when

entertaining family and friends. Fabulous with a margarita!


1 packet Eskort Jalapeno Pork Sausages

1 tomato, chopped

1 green chilli, seeds removed and chopped

small handful fresh coriander, chopped

½ onion, finely chopped

salt and ground black pepper

150g cheddar cheese, grated

100g mature cheddar cheese, grated

100g white cheddar cheese, grated

15ml (1T) flour

10ml (2t) olive oil

½ onion, finely chopped

125ml (½c) beer, plus more if necessary

tortilla chips to serve 


  • Preheat the oven to 230°C.
  • In a small bowl, mix the tomato, chilli, coriander and onion and season with salt and pepper. Toss
  • well, cover and refrigerate until ready to serve.
  • Combine the cheeses and flour in a bowl and set aside.
  • Remove the sausage meat from the casings and set aside.
  • Heat the oil in a pan and fry the meat until golden, breaking up the meat up with a
  • wooden spoon as you cook.
  • Add the onion and continue cooking until the meat is cooked and the onion soft. Remove the
  • mixture from the pan and set aside.
  • Bring the beer to a simmer in a saucepan then slowly add the cheese and flour mixture, whisking constantly so
  • the cheese melts into the beer.
  • When all the cheese has melted and is smooth, add the sausage and onion mixture and stir to combine.
  • Remove from the heat and transfer to an ovenproof dish. Grill for 5-10 minutes until the cheese is bubbling
  • and browned. Remove from the oven and cool slightly.
  • Serve with tortilla chips and topped with the salsa.
