Spicy chicken noodle salad

Make Mom’s day extra special with this #JustDelicious dish. She’ll be so surprised and dare we say it, rather impressed!


375g Eskort Chicken Sausages, sliced

250g (1c) thin rice noodles or egg noodles

30ml (2T) fish sauce

30ml (2T) sugar

30ml (2T) white wine vinegar

15ml (1T) sesame oil

3 garlic cloves, finely chopped

1 jalapeño, finely chopped

1 gem lettuce, leaves separated

60g (¼c) peanuts, chopped

few fresh mint leaves

small handful fresh coriander 


  • Cook the noodles according to the package instructions.
  • Whisk together the fish sauce, sugar and vinegar in a small bowl and set aside.
  • Heat the sesame oil in a pan and fry the sausages, garlic, jalapeño and about 2 tablespoons of the fish sauce mixture. Cook for 5-8 minutes or until the sausages are done,remove from heat.
  • Serve the noodles with the lettuce leaves and sausages, topped with a sprinkling of peanuts, mint and coriander, and a drizzle of the remaining fish sauce mixture.
